Cook and crumble the beef and diced onions. Add some salt as they're cooking.

Simultaneously, boil the noodles in salted water until tender then drain briefly.

Place drained noodles in 2 serving bowls and stir in 1/4 tbsp butter into each bowl, then stir in shredded cheese (consider weighing separately in two 28-g ramikens). Top with beef and onion mixture and drizzle with condiments of choice, as well as chopped green stuff of choice.

Absolutely delicious and half the calories of our previous cheeseburger mac recipe.

535 calories per serving (1/2 recipe). Very substantial and enjoyable, especially if served with fruit and a crunchy bright vegetable. First time we tried it, we had it with apricots and radishes.
